Ingredients
1⁄4 c Vegetable Oil
1⁄2 c Onion (diced)
1⁄2 c Celery (chopped)
1⁄2 c Carrots (diced)
1 t Salt (fine, double if coarse)
1 t Black Pepper (ground)
1 t Thyme
1⁄2 c Parsley (fresh, chopped)
4 c Chicken Broth
1 c White Flour
2 t Baking Powder
1⁄2 t Salt (fine, or double for course)
1 T Butter (may substitute margarine or butter)
1⁄2 c Milk (may substitute soy)
Instructions
- Heat vegetable oil in a large stock pot.
- Sauté the onions, celery, and carrots until softened.
- Add the broth, salt, pepper, thyme, parsley.
- Bring to a boil.
- In a separate bowl, mix the flour, baking powder, 1/2 teaspoon of salt, and butter until the pieces of butter are about the size of a pea.
- Add the milk to the flour mixture. Do not over mix the dumpling mixture.
- Plop the dumpling mixture in quarter-cup blobs into the boiling soup.
- Cover, reduce heat to low, and simmer for 20 minutes.
