Ingredients
1 c Quinoa (washed)
1 1⁄2 c Chicken Broth ((Vegetable broth may be substituted))
1 t Cumin
1⁄2 t Turmeric
1⁄2 c Kale (roughly chopped)
1⁄2 t Salt (fine (or 1 teaspoon coarse))
Instructions
- Rub and rinse quinoa under warm water.
- Combine quinoa, chicken broth, turmeric, cumin, and salt into a pressure cooker.
- Heat pressure cooker until it reaches operating temperature at high pressure.
- Cook for 3 minutes.
- Remove from heat. Allow pressure to decrease.
- Open the pressure cooker and add the chopped kale.
- Briefly saute to soften kale.
