Ingredients
1⁄2 c Vegetable Oil
1⁄2 c White Flour
2 c Chicken Broth
1 t Salt
1⁄2 t Black Pepper (ground)
1 c Milk ((Soy may be substituted))
Instructions
- In a sauté pan or skillet, heat the oil or fat drippings over moderate heat.
- Add the flour and mix well continuously.
- Once the flour has browned to the desired level, slowly begin adding the broth. As the broth combines with the flour mixture, vigourously wisk to avoid lumps.
- Add more broth or soy milk until the gravy reaches the desired consistency.
- Add salt and pepper to taste.
Notes
Flour that is fried to a darker brown color has a stronger, nuttier flavor. However, it has less capability to thicken the liquid.
Simmer the gravy for several minutes before determining how much additional broth or milk to add. Often the gravy thickens much more than expected.
